Carragheen Chondrus Crispus & Mactocarpus Stellatus This Atlantic Sea Plant is traditionally used to make Jelly Moulds, and a Natural Nourishing Health Drink. Take 5g of Carragheen, rinse under running water, add half a litre of milk for a mould, bring to boil then simmer for 20 mins. Add flavourings as required. Strain and refrigerate to set. |

Take 7g of chopped carragheen flakes, and put them in a saucepan with 1oz of sugar, 1 desertspoon cocoa, and a litre of milk. Bring to boil, and stir down, continue boiling on reduced heat stirring all the time till the mixture has thickened. Pour through a seive into moulds or ramekins. Cool and chill, dust with cocoa or grated chocolate before serving.
