Recipes and common uses :

As a gelling agent use 7g per litre for a firm set gel.

For thick hot chocolate add 7g rinsed SeaVeg Irish Carragheen to a pan with 1 litre of milk, and some good quality cocoa, and sugar to taste, bring to boil and stir continuously for 5 minutes till thickened, pour through a sieve and serve with a jug of warm milk.
